If you're ever in Puerto Vallarta, you need to try the pellizcadas: thick tortillas with the edges rolled up to allow them to be better containers for whatever ingenuity is piled on top. The name comes from pellizcar, “to pinch,” referring to the way the edges are pinched during cooking to make them curl upward. The pictured version is with cheese and beans and lengua from a local institution just called Pellizcadas so when you show up you know what you should order.
My gf and I ended up in PV at the end of 2025. During some moment amidst the heat and the clarifying light of travel, I concluded that I missed writing and sharing online enough to do something about it. Posting used to be a fairly enjoyable part of my life, but that was back in the days when people used Facebook and when Twitter didn't suck.
So codex and I made this site, and I decided the first post should be a photo of a glorified cheesy taco to avoid taking any of this too seriously.
